Wildfire Brick Oven Pizza: Each Bite is a Delight

If the saying, “don’t judge a book by its cover” was a restaurant, Wildfire Brick Oven Pizza would be it. Attached to a Commons Convenience store behind a gas station, Wildfire Pizza looks like it would the type of place to serve frozen, forever reheated, gas station pizza. However, don’t let its location fool you! They serve fresh, brick oven baked pizza, with a diverse menu.

On its website, wildfirebrickoven.com, Wildfire Pizza describes their restaurant as “a proud small local family run and veteran owned pizzeria” with a “love for classic cars.” With the little space they have, they managed to incorporate classic car decorations into what seems like a building entirely separate from the gas station attached. In addition to pizza, they also make fries, bread knots, milkshakes, subs, calzones, and wings. You can order a classic pizza, like pepperoni or meat-lovers, or if you’re in the mood, branch out and try one of their signature creations, like The Figawi or Great White Pizza. Did I mention their names are a funny play on Cape Cod related attractions and delicious?

My personal favorite, The Figawi, is a clever play on the boat race of the same name, and a delicious signature pizza with fresh mozzarella, ricotta, fig jam, prosciutto, garlic, arugula, and balsamic glaze. Because their crust is baked in a brick oven, it bakes to crunchy perfection, while also maintaining a chewiness that doesn’t hurt your mouth. The edges of the pizza get a slight char, without the bottom becoming too burned. With the Figawi, the arugula and prosciutto get crispy while baking, so the soft ricotta balances out the texture of the crust and toppings nicely. The balsamic glaze also adds a sweetness to the pizza that balances out the saltiness of the prosciutto and the spiciness of the arugula. While no pizza is perfect, Wildfire Pizza comes close to the mark. The thickness of the cheese and toppings can make it hard to hold the pizza, but overall whether you order to go or eat in, you’ll enjoy Wildfire Brick Oven Pizza!
